I have been so busy!

I am working on creating my daughters 2nd Birthday party, working and going to school! Please be patient! I will add pictures of my progress!  My goal this year is to make everything that I possibly can!

I have made her purple and white tutu with a yellow accent bow.  I am working on creating adorable cake pops for party favors.  Her party is going to be in plum and mustard (fancy for yellow and purple!)! I researching how to make her a pinata.  I plan on making the cupcakes, toppers, and creating as many decorations as possible!

Eating Healthy

Hello! Sorry for the recent decline in postings! I have currently decided I need to lose weight! I will be researching healthier options and incorporating them in my recipes! I look forward to sharing them with you! I have goals that I need to achieve before my daughter turns 2 and these cupcakes, breads, and cream cheese danishes are not helping:)  Any ideas?

Homemade Cheese Danishes

This was a very quick and delicious recipe! All you need is:

4 oz Cream Cheese (I used the reduced fat variety)
1/4 cup Confectioners Sugar
1/2 tsp Vanilla Extract
1 egg ONLY the egg white
Fruit Filling (Your Choice)
Jumbo Buttermilk Biscuits

Oven at 350

Mix all of the ingredients EXCEPT the fruit filling and the biscuits
Put Biscuits on a pan
make a "well" in the center of each biscuit

Fill the "wells" of the biscuit with 1 Tbs of Cream Cheese Mix
Top with 1 Tbs of the fruit filling
bake for 20-25 min
Making a cake is mostly about licking the bowl

Banana Nut Bread

I have never made bread before. There were some bananas that were about to go bad so I decided to try. This was easy and fun! The little girl I nanny enjoyed mashing the bananas and adding the dry ingredients! The outcome was a very moist and delicious loaf of bread! I wanted to steer toward a healthier more organic recipe but I am new at this and I don't know exactly how to substitute and I had to work with what was available.

2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1-2tsp nutmeg
1 Tbs cinnamon
1 cup walnuts
3/4 cup sugar in the raw
1/4cup applesauce
1/2 cup milk (organic)
1/4 cup Creme Bruvee Caramel Vanilla Creamer
1 cup (3 large) bananas

Preheat oven to 350 Degrees F.
Thoroughly mix dry ingriedents. In seperate bowl mix wet ingedients. Slowly combine the wet to the dry stirring constantly. Put in a loaf pan and bake for 50-55 minutes. The top will be golden brown.

I loved it! I hope you do as well!
